🥣 Lentil Stew Italiano Recipe

This bowl is pure comfort, hearty, wholesome, and packed with flavor and love. Perfect for chilly days when you want something nourishing but simple to make.

Ingredients:

  • 1 lb lentils

  • 2 qts chicken broth and 16–32 oz water (or simply use 3 qts broth total for a richer, heartier flavor) (I use Imagine broth)

  • 2 lbs carrots, sliced

  • 1 large zucchini, cubed

  • 2 large onions, chopped small

  • 2 bulbs garlic, whole cloves

  • 6 celery sticks, chopped fine

  • 1 large bunch spinach

  • 1 jar arrabbiata or marinara sauce (24 oz glass jar)

  • Dried basil, oregano, and fresh cracked black pepper

  • Fresh parsley for garnish

  • Olive oil, be generous

Procedure:

  1. Sauté onions in a generous amount of olive oil until golden (not brown).

  2. Add garlic, celery, carrots, zucchini, and dried herbs, then sauté a few minutes longer.

  3. Add broth, water (or extra broth), lentils, tomato sauce, and another drizzle or two of olive oil.

  4. Simmer gently until lentils are tender.
    (Optional: add 1-2 handfuls of small pasta as the lentils are cooking adjust liquid as needed. This is meant to be a thicker type of stew/soup.)

  5. Adjust consistency with extra broth if desired.

  6. Stir in spinach just until wilted.

  7. Serve with fresh parsley and cracked pepper.
