Homemade Chicken Soup -- Comfort for the Soul

There’s nothing like a pot of homemade chicken soup simmering on the stove… warm, nourishing, and made with simple ingredients that truly comfort the spirit.
Here’s my favorite, tried-and-true recipe -- cozy, healing, and packed with love.

🌿 The Beautiful Benefits of Homemade Chicken Soup

There’s a reason chicken soup has been treasured for generations.
It’s warm, nourishing, and filled with simple ingredients that bring comfort to both body and spirit.
Here are some gentle, grounded benefits you can naturally enjoy from a homemade pot of soup:

1. “Nature’s Penicillin” -- Traditional Wisdom

For decades, chicken soup has been lovingly called nature’s penicillin — not as medicine, but as a comforting remedy passed down in families.
It’s the kind of nurturing food people reach for when they want warmth, care, and soothing comfort.

2. Packed With Vitamins & Minerals

Depending on what you add, chicken soup can offer natural nourishment like:

  • Vitamin A from carrots

  • Vitamin C and K from parsley

  • B vitamins from chicken

  • Antioxidants from onions and celery

  • Minerals like iron, zinc, magnesium, and electrolytes

Simple ingredients come together to create a nutrient-rich bowl.

3. Hydrating + Gentle on Digestion

The warm broth helps hydrate and is easy for the body to absorb.
On days when heavier foods feel too much, chicken soup offers gentle nourishment and comfort.

4. Naturally Warming & Grounding

A hot bowl of soup supports warmth, circulation, and that cozy, wrapped-up feeling we crave on chilly or stressful days.

5. Filled With Plant-Based Goodness

Vegetables like onions, carrots, celery, parsley, and spinach carry natural plant compounds that support overall wellness.
They bring color, flavor, and gentle nourishment into every spoonful.

6. Emotional Comfort That Feels Like a Hug

There’s something special about homemade soup — it soothes the heart as much as the body.
It’s nostalgic, calming, and reminds us of being cared for.

7. Protein + Amino Acids From the Chicken

Chicken naturally contains:

  • Protein

  • Collagen (especially if bones are used)

  • Amino acids like glycine and cysteine

These help support strength, energy, and recovery.

🍲 In Every Culture, Chicken Soup Means Comfort

No matter how you make it — simple, rustic, veggie-packed, or extra brothy — chicken soup has always been a symbol of warmth, nourishment, and home.

Chicken Soup Recipe:

🥕 Ingredients

  • 1 whole organic chicken, cleaned
  • 3–4 large onions, chopped (these help make the broth naturally sweet)
  • 2 lbs carrots, sliced
  • 6–8 stalks celery, chopped
  • 1 bucket fresh spinach
  • 1 bunch fresh parsley, chopped
  • 3 containers Imagine Chicken Broth
  • ½–¾ cup Jovial gluten-free pastina (Stelline)
  • 2–4 cups purified water
  • Fresh ground black pepper, to taste

Optional add-ins: kabocha squash, broccoli, or any extra veggies you love.

🍲 Instructions

1. Create the broth

In a large soup pot, add the cleaned whole chicken, chicken broth, and 2–4 cups of purified water.
Bring to a boil, then reduce to a gentle simmer.
Cook until the chicken is fully done — usually about 1 hour or more.

2. Remove & shred the chicken

Once the chicken is cooked through, carefully remove it from the pot and set it aside to cool slightly.

3. Strain the broth

Strain the broth into another pot to be sure it’s completely bone-free.
Pour the clean broth back into the original soup pot.

4. Add your vegetables

Add the chopped onions, carrots, celery, and any extra veggies you love.
Simmer over low to medium heat until the vegetables begin to soften.

5. Add the pastina (stelline)

After the veggies have cooked for about 20 minutes, stir in the Jovial gluten-free pastina.

6. Shred the chicken & return to the pot

Shred the cooked chicken into bite-sized pieces and add it back into the soup.

7. Finish with greens

Once the vegetables and pastina are fully cooked, stir in the chopped parsley and fresh spinach.
Cook just until the spinach wilts.

8. Season & serve

Top each bowl with fresh ground black pepper.
If you’re not dairy-free, a sprinkle of freshly grated Locatelli cheese makes it extra delicious.

💛 Enjoy!

This soup is warming, soothing, and full of love — perfect for fall and winter days, tender days, or anytime you need comfort in a bowl.
