Chicken Soup Recipe:
🥕 Ingredients
- 1 whole organic chicken, cleaned
- 3–4 large onions, chopped (these help make the broth naturally sweet)
- 2 lbs carrots, sliced
- 6–8 stalks celery, chopped
- 1 bucket fresh spinach
- 1 bunch fresh parsley, chopped
- 3 containers Imagine Chicken Broth
- ½–¾ cup Jovial gluten-free pastina (Stelline)
- 2–4 cups purified water
- Fresh ground black pepper, to taste
Optional add-ins: kabocha squash, broccoli, or any extra veggies you love.
🍲 Instructions
1. Create the broth
In a large soup pot, add the cleaned whole chicken, chicken broth, and 2–4 cups of purified water.
Bring to a boil, then reduce to a gentle simmer.
Cook until the chicken is fully done — usually about 1 hour or more.
2. Remove & shred the chicken
Once the chicken is cooked through, carefully remove it from the pot and set it aside to cool slightly.
3. Strain the broth
Strain the broth into another pot to be sure it’s completely bone-free.
Pour the clean broth back into the original soup pot.
4. Add your vegetables
Add the chopped onions, carrots, celery, and any extra veggies you love.
Simmer over low to medium heat until the vegetables begin to soften.
5. Add the pastina (stelline)
After the veggies have cooked for about 20 minutes, stir in the Jovial gluten-free pastina.
6. Shred the chicken & return to the pot
Shred the cooked chicken into bite-sized pieces and add it back into the soup.
7. Finish with greens
Once the vegetables and pastina are fully cooked, stir in the chopped parsley and fresh spinach.
Cook just until the spinach wilts.
8. Season & serve
Top each bowl with fresh ground black pepper.
If you’re not dairy-free, a sprinkle of freshly grated Locatelli cheese makes it extra delicious.
