
A long while back, I visited the Rodale Cafe in Saucon Valley, Eastern Pennsylvania, and absolutely loved it. It was such a treat to find a place that focused on fresh, locally sourced ingredients. At the time, they offered some really unique smoothies.
I tried their Ginger Peach smoothie and enjoyed it so much that I came home and created my own version. And I have to say -- it turned out so yummy. If you’re a ginger fan, the fresh ginger truly makes this smoothie.
Here’s my simple, nourishing version.
Ingredients
- 2–3 large handfuls fresh organic spinach
- 2 cups frozen peaches
- 1/2 - 1 tsp minced fresh ginger (or to taste)
- 9.5 oz chilled coconut water (or more if smoothie needs thinning)
- 1 tsp to 1 tbsp raw honey, to taste
- 1/4 to 1/2 tsp organic matcha green tea powder (optional)
Instructions
- Place all ingredients into a high-speed blender.
- Blend until smooth and creamy.
- Adjust sweetness or ginger to taste, if needed.
Best enjoyed soon after blending.
Why These Ingredients Work So Well Together
Fresh Spinach
Spinach adds a mild taste to the smoothie without overpowering the flavor. It’s a simple way to include leafy greens, providing natural vitamins and minerals that support overall nourishment while blending easily into the smoothie.
Frozen Peaches
Peaches bring natural sweetness and a creamy consistency to the smoothie. They pair well with ginger and greens while adding hydration and gentle fiber, making the smoothie satisfying without feeling heavy.
Fresh Ginger
Fresh ginger is the star of this smoothie. It adds a warming, invigorating kick that wakes up the palate and gives the smoothie its signature flavor. Ginger is traditionally used to support digestion.
Coconut Water
Coconut water keeps the smoothie light and refreshing while providing natural electrolytes. It blends well and helps hydrate without the excess sweetness of juices or the heaviness of dairy-based liquids.
Raw Honey
Raw honey adds just a touch of sweetness and helps balance the ginger’s spice. You only need a small amount, allowing the fruit to remain the primary source of sweetness while gently rounding out the flavors.
Matcha Green Tea Powder
Matcha offers a gentle, steady energy boost without the sharp spike of coffee. It works well in the smoothie, adding a subtle earthy note and a sense of calm alertness. This ingredient is completely optional and easy to adjust based on preference.
