Easy, Low-Sugar, Gluten/Dairy Free Breakfast Oatmeal Cookies


These cookies were a big hit with the family. If you are looking for something that you can grab and go that is not sweet then this recipe is for you. So easy and so versatile. I think it is a very forgiving recipe so feel free to mix and match what you like. Here is what I did... add to a large mixing bowl:

3 cups gluten free quick cooking oats

2 organic eggs

1/2-1 cup raisins (I didn't measure)

5-6 tbs hemp seeds

Approximately 4 good sized very ripe bananas (brown speckles)

Lily's dark chocolate (no sugar added) shaved or chips

Ceylon cinnamon (sprinkle, sprinkle)

The next time I make them I will probably add some melted coconut oil (2-3 tbs) but I didn't have any in the house this time. Feel free to add what you like ie: chopped nuts, seeds, cranberry, etc. Mix all ingredients well so that everything is coated and there aren't any dry oats floating around. Then line a cookie sheet with parchment paper. Use a 1/4 cup measure and scoop out one at a time onto your cookie sheet....flatten cookie with a fork. Pop into a pre-heated 350 degree oven and bake for about 15-25 minutes or until desired texture/browned.

These would probably taste great with VioLife's dairy free cream cheese. Also, they are delicious right out of the oven. Once cooled I would keep in a tight container to keep them fresh and from drying out. Enjoy!
